Bo Xao Mang
 (Beef with Bamboo shoots)

4 tablespoons sesame seeds
8 oz beef steak, thinly sliced
3 tablespoons oil
3 cloves garlic, peeled and minced
3 spring onions (scallions), cut into 1 inch lengths
8 oz bamboo shoots, thinly sliced
2 tablespoons fish sauce
1 tablespoon oyster sauce
1 teaspoon salt
1/4 teaspoon ground black pepper

1. Roast the sesame seeds in a frying pan or toaster oven for about 10 minutes until light brown, stir often to prevent burning. Remove from heat and crush lightly with a rolling pin to release the flavor.

2. Heat 2 tablespoons oil in wok over high heat. Stir-fry the beef for about one minute. Remove and set aside.

3. Heat the remaining oil in the wok. Add the garlic, spring onions, and bamboo shoots. Stir-fry for 3 minutes.

4. Add the fish sauce, oyster sauce, salt, and pepper, stirring until well combined.

5. Return the beef to the wok and add the sesame seeds. Continue to stir-fry for about 3 minutes more. Remove from the heat and serve.
