Curried Vegetables

Ingredients

Lentils (boil while preparing other vegetables)

Eggplant

Green beans

Garlic

Onion

Bay leaf

Black pepper

Cumin

Coriander

Chili

Anise

Cinnamon-stick

Star Anise

Curry leaves from Asian Market

(Potatoes and chicken are optional.  Add early so that they have time to cook thoroughly.)

RICE

Wash rice twice and then level the rice before adding l finger digit of water above the rice level.  Cook in rice cooker.

 Saute onions and spices and garlic

Add lentils and more water until lentils are boiling and soft.

Add vegetables
