Kenyan Madazi

Note: In the absence of the Kenyan wheat flour, we were able to make do with American wheat flour.

Ingredients:

2 cups All Purpose wheat flour
1 1/2 cups Self rising wheat flour
4 Tablespoons Butter
1 egg, well mixed
6 Spoons of Sugar
7 Cooking oil, most preferably vegetable oil

Directions:

Mix two cup of All purpose wheat flour with one and half cups of self-rising flour with warm water.

Add four tablespoons of butter and a well mixed egg.

Add six spoons of sugar, the white sugar, or to your taste. Make all this into a thick dough.

Once ready, roll it using a rolling bin, of course on a table. The flattened dough should be one eighth of an inch thick.

Heat cooking oil in a deep cooking pan to real hot.

Using a knife, cut the rolled out dough into whatever shape, something like 2 inches long, and one inch wide. (choice of shapes and sizes is for the cook) Dip the cut pieces in the hot oil, many pieces at a time, turn them when golden brown. Once all side are done, remove them and place in a container. Repeat the cooking process till all dough is done.

Can be eaten hot, or kept for later.
