FILLING
Boil “tons of potatoes,” add green
onions, ginger, cilantro, 1 1/2 tsp. salt, 1/2 tsp. SA red spice and
black pepper.
Mix wheat flour and water for dough.
Make a small amount of the dough into a
circle with hands. Fill center with potato mixture. Bring edges of
dough over the filling.
Mash to a big pancake and roll with
rolling pin. Sprinkle more dry flour on top if needed.
Cook one pancake at a time in a small
amount of oil. |
