Pumpkin Roll

The Cake Part:

 3 eggs slightly beaten
1 C. white sugar
2/3 C. Pumpkin Pie Mix
1 tsp. Baking Soda
1/2 tsp. Salt
3/4 C. Flour

Line a cookie sheet or jelly roll pan with wax paper.  Pour pumpkin mixture in pan and spread out into a thin layer.  Bake 350 degrees for 20 minutes (or until it is a golden brown on top).  Immediately after removing from oven, roll cake into a log, let cool completely.

The Filling Part:

2 Tbs. Soft Margarine or Butter
1-8oz. Pkg. Cream Cheese
1 C. Powdered Sugar
1tsp. Vanilla

Cream Together.

One roll has cooled, unroll and remove wax paper, spread on filling, re-roll and chill.  This can be frozen.
