YOGURT ÇORBASI (Yogurt Soup)

For 6 people

Ingredients:

2 cups water
1/2 cup rice
1/2 cup flour
1/2 cup yogurt
2 egg yolks
Salt
Minced fresh mint
1/2 cup olive oil
1 Cup beef broth or chicken broth.

Directions:

Boil rice, water and broth together. Mix flour, yogurt and egg yolks in a bowl. Strain into another bowl. Add this liquid slowly into the boiled rice and cook for 10 minutes. Add minced mint into heated oil. Pour this mixture into the soup. Serve after adding desired amount of salt.
